Creamy Three-Cheese Fettuccine

In a large saucepan, heat the butter over medium heat.

Add the shallots and cook, stirring, until tender, 2–3 minutes.

Add the garlic and cook 1 minute longer, stirring constantly.

Stir in the heavy cream and heat through.

Add the Asiago cheese, ½ cup Parmesan cheese, Romano cheese, salt, and pepper. Bring to a gentle boil, stirring constantly.

Reduce heat and simmer, uncovered, until the sauce thickens, about 10 minutes, whisking occasionally.Meanwhile, cook the fettuccine according to package directions.
