Soft & Fluffy Skillet Flatbread (No Oven)
Ingredients (Makes 6–8 flatbreads)
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp instant yeast
- 3 tbsp vegetable oil or olive oil
- 1 cup warm milk (or warm water)
- ¼ cup warm water (as needed, for soft dough)
Optional for extra softness:
- 1 tbsp melted butter (for brushing after cooking)

1️⃣ Make the dough
In a large bowl, mix flour, salt, sugar, and yeast.
Add oil and warm milk. Start mixing, then gradually add warm water until you get a very soft, smooth dough.2️⃣ Knead & rest
Knead for 8–10 minutes until elastic and slightly sticky.
Cover and let rest for 1 hour, or until doubled in size.3️⃣ Divide
Punch down the dough and divide into 6–8 equal balls.
Cover and let rest 10 minutes to relax the gluten.4️⃣ Shape
Roll each ball into a thin circle (about 18–20 cm).
Don’t worry if it’s not perfect—rustic is good 😉5️⃣ Cook on the pan
Heat a non-stick skillet over medium heat (no oil).
Place the dough in the hot pan and cook until bubbles form and the bottom has golden spots (about 1–2 minutes).
Flip and cook the other side until puffed and lightly browned.6️⃣ Finish
Remove from the pan and cover with a clean towel.
Brush lightly with butter if desired. -
Tips for Perfect Flatbread
- The dough should be soft, not stiff
- Medium heat is key—too hot burns, too low dries it
- Keep cooked breads covered to stay fluffy
